Spicy Mushroom Pepper Italiano

This is one of my absolute favorite raw food recipes because it is so moist and meaty you won’t believe it isn’t cooked. It is a fantastic comfort food that will leave you wanting more.  This recipe will make 6 servings. Enjoy!



2 c Shitake mushrooms

2 c Baby Bella mushrooms

1/2 c Spanish onion

1/2 c Purple onion

2 or 3 Serrano peppers

3/4 c Yellow bell pepper

3/4 c Red bell pepper

1/2 c Poblano pepper

3/4 c Zucchini or Yellow squash

1 c oil-packed sun-dried tomatoes (drained)

1/2 c Kalamata olives (pitted and halved)

3 cloves of garlic, minced

1 T fresh parsley (ground)

1 T fresh rosemary (ground)

1 t fresh thyme (ground)

1 t fresh oregano (ground)

Celtic Sea Salt to taste

1/2 c olive oil

Mozzarella “Cheese” Sauce

1/2 c raw cashews

1/2 c raw macadamia nuts

1/4 c pine nuts

3/4 c water

1/4 c lemon juice

1 T nutritional yeast

1/2 c olive oil

Pinch of sea salt

Pinch of fresh, ground black pepper

1 T fresh parsley, finely minced


Slice the mushrooms, onions, peppers, zucchini, and sun-dried tomatoes into thin strips. Slice olives in half and remove pits. Place in a medium sized mixing bowl and add the minced garlic, spices, and olive oil. A coffee grinder is excellent for grinding the fresh herbs. Gently toss vegetable mixture together and transfer to a 3 qt glass baking dish. I like to use a Pyrex 7 ½ x 9 ½ dish. Heat this in a dehydrator at 110* for 2 – 3 hours.

Pour the cashews, macadamia, and pine nuts into a blender and add the remaining ingredients except for the parsley. Blend till smooth but not long enough to heat up. Adjust the spices to your desired taste. Stir 1/4 to 1/3 c of the cheese sauce into the casserole. Pour the remaining cheese sauce over the top of the casserole, sprinkle with parsley and heat in the dehydrator for 3-4 hours. Serve immediately.

*Note- In lieu of a dehydrator, place casserole on the top rack of your oven with the temp set at the lowest setting and set the door slightly ajar.
